Why are we giving Gurman any sort of credit for "leaking" the Pro colors that we've known about for months?

Such as?
Most recently and spectacularly, at the end of last year he claimed Tim Cook wouldn’t be announcing his departure from Apple any time soon, saying it wasn’t happening in the timeframe that the Financial Times had reported, calling the report “simply false”. As it turns out, Gurman was the one who was wrong and the Financial Times report was 100% correct about the timeline, which we’ve just seen play out.

There are many many many cases of him getting details about things incorrect (how many times has he announced a new Apple TV was coming?!), but he says so much stuff that it’s easy to miss.

But perhaps one big that you may remember is when we endured months of those terrible stupid-looking renders of an ugly flat-sided Apple Watch Series 7, with Gurman saying “this year’s is all about a new design with a flatter display and edges”. That was completely incorrect - the Series 7 was in fact even more rounded and curved! - and we never saw a model with flat edges/sides. (Prosser was also pushing that nonsense theory)

All you have to do is Google and you’ll find tons of cases where he said stuff that didn’t happen.
