Apple updated the iPod touch one year ago in May 2019 with the A10 Fusion chip for faster speed, a 4-inch display, and 8-megapixel rear camera. The iPod touch family still sports a Home button without Touch ID, and it retains the same design as the previous sixth-generation model from 2015.

Might as well pick up a used iPhone 8 64GB for $225, better in every way
Or a brand new iPhone 7 Plus for $199 at Walmart.

On another note... I wish Apple would build a dedicated music player that wasn’t just a gimped iPhone. I would love something with a tactile scroll wheel (like the old days) and, more importantly, a kick ass DAC. These things are toys.

Edit: I wouldn’t recommend anything older than iPhone 8. You’d be missing out on a TrueTone display, which adjusts the screen color temperature to match your environment in real time. It’s a huge improvement to the screen - once you have it there’s no going back.

I do wonder how much longer Apple is going to keep this product around, doing only the bare minimum to maintain iOS support - it's received little more than chip updates since the 5th gen was introduced in 2012. Given it's inclusion in the base iPad the A10 probably still has a lot of life left in it, so I could see them continuing to sell this as is for another couple years.
The iPod touch is a very popular device in retail business. It is small enough be carried around easily by retail employees and inventory workers. Combined with various scanner and credit card processing devices, it is a great choice. That is why Apple did not change the case during the last refresh. Companies wanted a plug-in replacable device.
